Though I've always been attracted to simple recipes that yield a lot of flavor, I find myself falling back on even simpler ones; especially in the summer. Maybe it's the unbearable heat that has me looking for ways to get out of the kitchen or the desire to spend more time with my family sitting on the floor building lego forts. I find having these 3-4 ingredient meals that are ready in 15 minutes indispensable. And that's how I've come to include this Za'atar salmon in my repertoire. It's not much of a recipe; some spices and oil and a quick bake yields the perfect results despite the minimal effort.
Za'atar invokes many summer memories for me. Namely, pita grilled on the barbecue with olive oil and za'atar, the highlight of outdoor barbecues. I started incorporating it into different dishes, like baked chicken and this fish and I love it even more. It's really versatile and intensely flavorful.
Zaatar Salmon
1-2lb salmon fillet
2 tablespoons olive oil
1 tablespoon zaatar spice
1 teaspoon garlic powder
1 teaspoon sea salt
pinch of black pepper
Preheat oven to 400F. Place the salmon on a baking sheet. In a small bowl, mix the oil and spices. Rub well onto the fish and bake for 12-15 minutes, or until the edges are browned and crisp. Serve warm or cold.
