I can't believe how close we are to the holiday season. I'm really excited about starting a new year. Beginnings are so full of hope and opportunities. I wonder where this one will take me.
Of course, the Jewish new year would not be complete without a recipe involving apples.
So I'm sharing with you a delicious Apple, Kohlrabi & Pomegranate Endive Salad with Honey Dijon Dressing. This really is the perfect appetizer to being your meal with. It's light and flavorful, sweet and tangy. The slight bitterness from the endive leaves are nicely offset by the delicate sweetness of the dressing. Try it, you'll be pleasantly surprised at this unusual combination.

Apple, Kohlrabi & Pomegranate Endive Salad with Honey Dijon Dressing
3-4 Belgian endives, halved and thinly sliced
1-2 green apples, cored and thinly sliced
1 large kohlrabi, peeled and thinly sliced
pomegranate seeds, for garnish
chopped parsley, for garnish
For the dressing:
¼ cup Dijon mustard
¼ cup mayonnaise
2 tablespoons honey
2 teaspoon sea salt
juice from half a lemon
Combine all the ingredients and whisk well.
To assemble the salad, combine the endives, apples, and kohlrabi in a large bowl and
toss in dressing. Garnish with chopped parsley and pomegranate seeds.
